Spicy Apple-Peach Chutney

Preparation Time: 20 minutes

Cooking Time: 1 hour and 10 minutes

Ingredients:

2 pounds of golden apples

2 pounds of peaches

1 cup of apple cider vinegar

1¼ cup of brown sugar

1 sweet onion, diced

3 cloves of garlic, minced

1 Tablespoon of ginger, minced

2 habaneros, seeded and chopped

½ teaspoon of cinnamon

¼ teaspoon of salt zest of a lemon

Instructions:

Peel, pit and cut peaches into small cubes. Peel and cube the apples, leaving the core out, same size as the peach cubes. Set aside for now. Combine the apple cider vinegar and brown sugar in a medium saucepan. Bring to a simmer on low heat. Once the sugar melts into the vinegar, add in the onions, ginger, and garlic. Cook until onions become soft. Add in the apples, peaches, habaneros, cinnamon, lemon zest, and salt. Mix to combine all ingredients. Let chutney gently simmer for an hour uncovered. Leave uncovered and stir occasionally, until chutney thickens. Let chutney cool down before serving with cooked country ham.

Tips: Habaneros are optional. The chutney is perfectly fine without them. They just add extra flavor and heat to cut down the sweetness of the chutney.
