Country Ham Center Slices & French Fries with a Hot Mustard Sauce

Serves: 2

Ingredients:

½ cup white vinegar

½ cup dry mustard

½ cup sugar

½ cup heavy cream

1 egg

⅛ tsp. salt

vegetable or canola oil for frying

3 large russet potatoes

(salt and pepper for french fries)

½ cup water

4 center slices Hobe’s Country Ham

Instructions:

In a small mixing bowl, mix to combine the vinegar and mustard. Let this sit, covered with plastic wrap, for 10 minutes until the vinegar soaks into the mustard.

Put a small pot on the stove and bring to a medium-low heat. Add in the mustard mix, sugar, egg, heavy cream, and salt, stirring constantly until sauce reduces and coats stirring tool. Once the sauce has reached a thick consistency, transfer into mixing bowl, cover with plastic wrap, and set in the fridge for 1 hour until the sauce cools and thickens.

While the sauce is cooling, slowly bring a medium pot with oil to approximately 390 degrees F (the pot should be ⅓ or ½ full with oil.) While the oil is heating in the pot, wash the skins of the russet potatoes and slice them into medium-thick, long fries. Transfer the fries into a strainer and rinse under water until starch is completely washed off. Completely dry off the fries and set aside in a bowl for frying.

Once the oil is to temperature, add half of the fries to the oil and fry until golden brown and cooked though. Once the batch has reached color, set it in a bowl lined with paper towels to remove excess frying oil.

Wait for oil to reach temperature again and then proceed to fry the rest of the fries. Once they are all fried, season with salt and pepper. Turn off the heat once you have finished frying.

Put on a large saucepan with ½ cup of water to a medium-high heat and cook the center slices, two at a time. Cook for 1 minute on each side, then remove from heat. Repeat with remaining center slices, then transfer slices to rack to remove excess water.

Heat the mustard sauce in the microwave for 1 minute, stir, then microwave for additional 30 seconds. Transfer into a gravy boat or serving bowl.

Plate the ham and fries and serve with hot mustard sauce.
