Sweet Potato Biscuits & Country Ham Slices

Serves: 8-10

Ingredients:

2 sweet potatoes

3 T. melted unsalted butter

1 cup buttermilk

3 cups flour

3 T. granulated sugar

5 tsp. baking powder

¼ tsp. baking soda

1 tsp. salt

3 T. cold unsalted butter, grated

10 Hobe’s Country Ham biscuit cut slices

4 oz. sweet relish

Carolina BBQ sauce for condiment

Instructions:

Wash and peel the sweet potatoes, then cut into large cubes. Place a pot of water on the stove and bring to a boil, then toss in the sweet potatoes and boil until they are soft. Drain the potatoes into a strainer, then let them sit until water is evaporated. Once the potatoes are dry, mash them in a mixing bowl, then transfer the bowl into the fridge until cool.

Remove mixing bowl from fridge. Add in the buttermilk and melted butter; whisk thoroughly.

Add in the flour, sugar, baking powder, baking soda salt, and grated cold butter and combine with mixture.

Lightly flour a cutting board and knead out the dough 10 times on it. Roll dough out to ¾-inch thick and cut with round cookie cutters. Dough should yield 10 -12 biscuits.

Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.

Transfer the biscuits to the baking sheet and bake for 17-20 minutes, until golden brown. Set biscuits aside to cool down.

Heat up a pan with very shallow water to medium-high heat. Once the water starts to steam, cook the ham slices, 2-3 at a time, until they start to shrivel and cook. Set aside on paper towels to dry.

Cut a sweet potato biscuit in half and add a ham slice, some relish, and drizzle with Carolina BBQ sauce. Repeat with all biscuits, then serve.
