Pork Side Meat Fried Rice

Preparation Time: 5 minutes

Cooking Time: 20 minutes

Serves: 3-4

Ingredients:

1 lb. Hobe’s Country Side Meat, chopped

⅓ cup carrots, skinned and small cubed

⅓ cup frozen green peas

⅓ cup white onion, diced

¼ cup green onion, sliced

2 cups cooked rice

⅛ cup soy sauce

½ tsp. salt

½ tsp. pepper

1 T. sesame seed oil

4 scrambled eggs

Green onion for garnish

Instructions:

Put a large wok or saucepan on medium-high heat and cook the side meat until slightly crispy. Drain any excess side meat grease from the pan.

Add in the carrots and green peas; cook until carrots are slightly soft. Then add in the onions and green onions; cook until onions are slightly soft.

Add in the rice, soy sauce, salt, and pepper. Stir and mix continuously until ingredients combine and rice is golden brown.

Push all the ingredients to one side of the pan, leaving the other half of the pan clear and open. Pour in the sesame seed oil and wait for the oil to heat up. Pour in the eggs over the oil and stir until they become slightly formed and cooked. Then mix the eggs to incorporate them into the fried rice. Cook and stir until eggs are firm and cooked.

Remove fried rice from heat and transfer into desired serving dish. Top the fried rice with freshly cut green onions and serve.
